Altea Illotto is a family-run winery founded by Maurizio Altea (agronomist) and Adele Illotto (oenologist). The estate vinifies exclusively grapes from its own vineyards, which have been farmed organically since 1993—among the first certified organic wine producers in Sardinia—without the use of synthetic chemical products.
The vineyards cover 5 hectares within the Sibiola IGT denomination, the smallest delimited wine area in Sardinia, including only the most suitable lands of the municipality of Serdiana in southern Sardinia.
The estate cultivates native and traditional grape varieties—Cannonau, Carignano, Monica and Barbera Sarda for reds; Nuragus, Nasco and Moscato for whites—mainly trained as bush vines (alberello) and Guyot Poussard, on light-coloured clay-marl soils in the low hills of Serdiana.
To maintain soil fertility, cover cropping and temporary grassing are practiced, with no external inputs.
Harvesting is strictly manual, using small perforated crates, with careful selection of the grape clusters to ensure that the fruit arrives in the cellar healthy and intact.
In the cellar, fermentations are spontaneous—based on the belief that indigenous yeasts contribute to the expression of the territory—and sulphur dioxide is used only in very low quantities.
